Baillieu Pinot Gris
The secret to Pinot Gris is plenty of ‘cool’ sunshine. Golden straw in colour. It shows aromas of fresh apple and honeydew melon. A medium bodied palate with crisp and spicy characters. The clean acidity combines with mineral notes on a light honeyed finish.

2016 was an unusually dry growing season, but daily temperatures were fairly mild. These conditions resulted in the earliest harvest we have ever had, but the intensely perfumed and balanced grapes have made some lovely and very approachable, balanced wines.
The growing season this year was extremely dry, but not overly hot, so ripening was very rapid across all varieties. The Pinot Gris had a great depth of flavour very early in the season, so it was handpicked in the early morning. It was whole bunch pressed and allowed to settle overnight, then fermented cool in stainless steel tank. Once dry, it was simply prepared for bottling in late June 2016, so the pure fruit drive of the wine was preserved with minimal artefact or intervention.
