2015 – Was a mild growing season, dry & cool with an excellent sunny & warm January, February & March. Intensely perfumed and balanced grapes will result in some super wines.
Destemmed to the fermenter where after a few days macerating, the fermentation commenced. Once dry the wine spent a further two weeks on skins to maximise the fine tannin extraction. It was pressed to French oak barrels, 25% of which were new, where it completed malolactic fermentation. Racked once in the late winter and returned to barrel for maturation, before preparation for bottling in early 2016.
