The rich cassis & chocolate palate sustained by fine tannins and oak balance moving into a long seductive finish. Old vines and skilled wine making contribute to a remarkable Cabernet Merlot.
2013 vintage – began with a cool, wet Winter, ensuring ample moisture in the soil. As cool humid Spring opened up into an exceptional sunny and dry January, February and March bringing an early harvest – Outstanding Vintage!
The Merlot was picked before the more tannic Cabernet. Both varieties were de-stemmed and fermented in small open fermenters with hand plunging used to macerate the cap and extract colour and tannin. The Merlot and Cabernet then spent 3 weeks on skins, to allow the tannins to coalesce and become softer, before pressing and transferring to barrel. Malolactic fermentation occurred in barrel and the wine was racked twice during maturation. The wine was then matured in French oak barrels for 20 months.
