A blend of Chardonnay, Pinot Noir and Meunier. A floral nose of honeysuckle & wild strawberries. The palate has a delicious, savoury lemon toast accompanies a zippy acidity with the fine bead rounding out the complex mouth-feel.

2015 – Was a mild growing season, dry & cool with an excellent sunny & warm January, February & March. Intensely perfumed and balanced grapes will result in some super wines.
This cool climate site is ideal for producing sparkling wine. The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The juice was fermented in stainless steel tanks. The wine was tirage, bottled in June 2015 with the finished alcohol after secondary fermentation at 12.5%. The wine spent 18 months on yeast lees prior to disgorgement in December 2016.
