A blend of Chardonnay, Pinot Noir and Meunier. A floral nose of honeysuckle & wild strawberries. The palate has a delicious, savoury lemon toast accompanies a zippy acidity with the fine bead rounding out the complex mouth-feel.

2016 was an unusually dry growing season, but daily temperatures were fairly mild. These conditions resulted in the earliest harvest we have ever had, but the intensely perfumed and balanced grapes have made some lovely and very approachable, balanced wines.
This cool climate site is ideal for producing sparkling wine. The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The juice was fermented in stainless steel tanks. The wine was tirage, bottled in June 2015 with the finished alcohol after secondary fermentation at 12%. The wine spent 18 months on yeast lees prior to disgorgement in December 2017.
