The 2017 harvest was relatively late compared to preceding vintages, so picking was during the mild and sunny Autumn. The berries show intense perfume and great flavour which has produced exceptional balanced wines.
This cool climate site is ideal for producing sparkling wine. The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The juice was fermented in stainless steel tanks. The wine was tiraged, bottled in June 2017 with the finished alcohol after secondary fermentation at 12%. The wine spent 23 months on yeast lees prior to disgorgement in May 2019.
