A perfect late Spring and early Summer resulted in the best flowering and fruit set we have seen for many years. It was followed by a dry and mild ripening period. The berries show intense perfume and great flavour which has produced exceptionally balanced wines.
This cool climate site is ideal for producing sparkling wine. The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The juice was fermented in stainless steel tanks. The wine was tiraged, bottled in September 2018 with the finished alcohol after secondary fermentation at 12%. The wine spent 16 months on yeast lees prior to disgorgement in January 2019.
