PALATE
Delicate citrus flavours folds into a toasty palate with fine bubbles. It rounds out with an elegant, strawberry finish.
VINTAGE
Budburst was early this year which resulted in flowering with good fruit set. The warm ripening period saw harvest commence a week sooner than normal. Yields were reported as high – average with fine acidity retention and excellent balanced flavours.
WINEMAKING
This cool climate site is ideal for producing sparkling wine.The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The juice was fermented in stainless steel tanks. The wine was tiraged, bottled in September 2019 with the finished alcohol after secondary fermentation at 12.5%. The wine spent 18 months on yeast lees prior to disgorgement in January 2021.
