PALATE

Delicate flavours of crisp apple & pear fold into a toasty palate with folds into a toasty palate with a fine mousse. Vibrant & balanced acidity rounds out with an elegant finish.

VINTAGE

Despite challenging weather conditions and the possibility of smoke taint, which we were fortunate to avoid. Settled weather throughout March allowed vintage to deliver consistently high quality, low tonnage fruit.

WINEMAKING

This cool climate site is ideal for producing sparkling wine.  The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The wine was triaged,
bottled in September 2020 with the finished alcohol after secondary fermentation at 12%. The wine spent 18 months on yeast lees prior to disgorgement in December 2021.
