Baillieu Pinot Gris
The secret to Pinot Gris is plenty of ‘cool’ sunshine. Golden straw in colour, the aromas are of poached pear and honeysuckle. These blend into a medium bodied palate with crisp & spicy characters.
The clean acidity combines with mineral notes on a soft dry finish.

2017 was marked by a wet and cold flowering period resulting in tiny crops. The harvest itself was relatively late, so picking was during the very mild and sunny autumn.
It was whole bunch pressed and allowed to settle overnight, then fermented cool in stainless steel tank. Once dry, it was simply prepared for bottling in late June 2017, so the pure fruit drive of the wine was preserved with minimal artefact or intervention.
