A delicate palate of strawberries & cream with a savoury dry finish.
Despite challenging weather conditions and the possibility of smoke taint, which we were fortunate to avoid, the Mornington Peninsula wineries were positive when the first grapes were picked in early March.
Yield is down some 40% on average due to cool, windy weather during fruit set in December and the growing period. Settled weather throughout March allowed vintage to deliver consistently high quality, low tonnage fruit.
The grapes were hand-harvested separately at ideal ripeness for generous fruit flavour, but still delicate structure, and each batch was whole bunch pressed very gradually to extract a beautiful pale red juice with low tannin. The Pinots were blended as juice and wild-fermented in old barrels to add a little savoury complexity to the pure berry freshness of the wine, whilst the Shiraz portion was settled overnight, and the clear juice was fermented cool in stainless steel tank to dryness. The two batches were blended and bottled in late July 2020.
