Maturation in French oak for 18 months gives complexity and structure.

2016 – was an unusually dry growing season, but daily temperatures were fairly mild. These conditions resulted in the earliest harvest we have ever had. The intensely perfumed grapes make for an excellent balanced wine.
Destemmed to the fermenter where after a few days macerating, the fermentation commenced. Once dry the wine spent a further two weeks on skins to maximise the fine tannin extraction. It was pressed to French oak barrels, 25% of which were new, where it completed malolactic fermentation. Racked once in the late winter and returned to barrel for maturation, before preparation for bottling in 2017.
