PALATE
The palate of black berries & white pepper combine to define this elegant cool climate shiraz. Maturation in French oak for 12 months gives complexity and structure.
VINTAGE
A perfect late Spring and early Summer resulted in the best flowering and fruit set we have seen for many years. It was followed by a dry and mild ripening period. The berries show intense perfume and great flavour which has produced exceptionally balanced wines.
WINEMAKING
Destemmed to the fermenter where after a few days macerating, the fermentation commenced. Once dry the wine spent a further two weeks on skins to maximise the fine tannin extraction. It was pressed to French oak barrels, 25% of which were new, where it completed malolactic fermentation. Racked once in the late winter and returned to barrel for maturation, before preparation for bottling in February 2019.
