The palate is complex & shows red plum, blackcurrant & violets combine with a warm spice. Maturation in French oak for 12 months gives complexity and structure.
A perfect late Spring and early Summer resulted in the best flowering and fruit set we have seen for many years. It was followed by a dry and mild ripening period. The berries show intense perfume and great flavour which has produced exceptionally balanced wines.
Both varieties were hand harvested and destemmed to the same fermenter, where fermentation by natural yeast commenced after a few days, and the wine had total maceration on skins for three weeks. Pressed to barrel, 25% of which were new, for maturation, with one racking in late winter before returning to barrel for a few more months, then prepared for bottling in February 2019.
