PALATE

The palate shows ripe cool climate flavours of blackcurrant, cocoa & red plum. The cabernet gives length of flavour, whilst the merlot fills the mid palate. Matured in French oak for 18 months, these old vines & skilled winemaking contribute to a remarkable wine.

VINTAGE

Budburst was early this year which resulted in flowering with good fruit set. The warm ripening period saw harvest commence a week sooner than normal. Yields were reported as high – average with fine acidity retention & excellent balanced flavours.

WINEMAKING

Both varieties were de-stemmed & fermented in small open fermenters with hand plunging used to macerate the cap & extract colour & tannin. The Merlot and Cabernet then spent 3 weeks on skins, to allow the tannins to coalesce & become softer, before pressing, blending, & transferring to barrel. Malolactic fermentation occurred in barrel & the wine was racked twice during maturation. The wine was matured in French oak barrels for 18 months, of which 30% were new.
