Budburst was early this year which resulted in flowering with good fruit set. The warm ripening period saw harvest commence a week sooner than normal. Yields were reported as high – average with fine acidity retention and excellent balanced flavours.
The Riesling was de-stemmed, crushed, drained pressed and settled. The free run juice was then cool fermented in stainless steel tank. This slow, cool ferment preserved the absolute fruit purity evident in the grapes, and after blending and filtering, the wine was bottled in late June to retain the freshness and aromatics of the fruit.
