Bright red cherries & rhubarb roll into mint, with silky tannins & moreish acidity.

WINEMAKING

The winemaking was focused strongly on optimising the charm of the vintage. After hand harvesting, the grapes were gently crushed & allowed to steep on their skins for 4 days. Yeast was then added & the ferment was gently pumped over twice daily early in the ferment & then lightly once a day towards the end of fermentation. Once malolactic fermentation was complete the wine was carefully racked off its ‘gross lees’ & put into old French oak barrels for 1 year. Bottling occurred in the Winter of 2021.
