PALATE
Layered, precise & complex. The palate has a javelin-like structure, long and direct, with fine chalky phenolics layered either side. Lemon pith sits front and foremost on the palate while an oyster-shell saltiness brings it home with a refreshingly mineral finish.
VINTAGE
Avoiding smoke taint through Summer the settled weather throughout March allowed vintage to deliver consistently high quality, low tonnage fruit.
WINEMAKING
Grapes gently pressed as whole bunches. No malolactic fermentation & no lees stirring. Wild yeast fermentation. 20% new French oak.
