The palate of plum, & cherry combine with leather & dark chocolate to define this elegant, cool climate Shiraz. Maturation in French oak for 12 months displays hints of vanilla & cedar spice. The wine rounds out with soft, silky tannins.
A wetter than average spring during flowering resulted in a slightly lower average yield. The La Nina weather continued over summer gave rise to slower ripening period than usual. This resulted in a harvest of grapes retaining high level of acidity with good concentration of flavour. The quality & flavour of the grapes remained excellent.
Destemmed to the fermenter where after a few days macerating, the fermentation commenced. Once dry the wine spent a further two weeks on skins to maximise the fine tannin extraction. It was pressed to French oak barrels, 25% of which were new, where it completed malolactic fermentation. Racked once in the late winter and returned to barrel for maturation, before preparation for bottling in February 2023.
