The palate displays blackberry, black cherry, cocoa with cedar and vanilla oak.
Matured in French oak for 18 months. The old vines and skilled winemaking contribute to a remarkable wine with great length, pronounced tannins and beautiful balance.
A wetter than average spring during flowering resulted in a slightly lower than average yield. The La Nina weather continued over summer gave rise to a slower ripening period than usual. This resulted in a harvest of grapes retaining high level of acidity with good concentration of flavour. The quality and flavour of the grapes remained excellent.
Both varieties were de-stemmed and fermented separately in small open fermenters with hand plunging used to macerate the cap and extract colour and tannin. The Merlot and Cabernet then spent 3 weeks on skins, to allow the tannins to coalesce and become softer, before pressing, blending, and transferring to barrel. Malolactic fermentation occurred in barrel and the wine was racked twice during maturation. The wine was matured in French oak barrels for 16 months, of which 30% were new
