WINEMAKER

PALATE

The palate displays blackberr, black and red plum, dark chocolate with cedar spice.  Matured in French oak for 16 months.  The old vines and skilled winemaking contribute to a remarkable wine with great length, chalky tannins, and a beautiful balance.

VINTAGE

Some challenging weather conditions around flowering reduced the fruit set and resulting yields. Although temperatures across the ripening period were slightly higher than average the day time temperatures were cooler. This allowed for an extended ripening period and together with low yields gives the wine great fruit concentration and drive.

WINEMAKING

Both varieties were de-stemmed and fermented separately in small open fermenters with hand plunging used to macerate the cap and extract colour and tannin. The Merlot and Cabernet then spent 3 weeks on skins, to allow the tannins to coalesce and become softer, before pressing, blending, and transferring to barrel. Malolactic fermentation occurred in barrel and the wine was racked twice during maturation. The wine was matured in French oak barrels for 16 months, of which 30% were new.
