The palate is laden with stone fruit & citrus flavours supported by a creamy mouth feel.
Some challenging weather conditions around flowering reduced the fruit set & resulting yields. Although temperatures across the ripening period were slightly higher than average the day time temperatures were cooler. This allowed for an extended ripening period and together with low yields gives the wine great minerality drive & finesse while maintaining the acidity.
The fruit for this wine came from the ‘Estate’ & Callanan’s Road vineyards.
The fruit was handpicked, whole bunch pressed, & the unclarified juice was fermented in a combination of new & seasoned French oak puncheons. It was stirred monthly in barrel, to build weight & complexity. – Paringa Estate.
