A blend of pinot meunier, pinot noir & chardonnay this rose coloured sparkling shows a floral nose of strawberry & apple. The palate has a fine mousse & balanced acidity which rounds out the soft finish.

VINTAGE
Average rainfall through winter maintained good soil moisture. We experienced some cold fronts through spring which were detrimental during flowering. As a result, yields were lower than average. However, we had some warm weather through summer resulting in incredibly concentrated and powerful wines with great acidity.
WINEMAKING
This cool climate site is ideal for producing sparkling wine. The grapes were whole bunch pressed in an airbag press on a gentle pressing cycle to minimise phenolic extraction. The juice was fermented in stainless steel tanks. The wine was triaged, bottled in August 2022 with the finished alcohol after secondary fermentation at 11.5%. The wine spent 11 months on yeast lees prior to disgorgement in September 2023.
