A longtime favourite among Merricks Store visitors, the Baillieu Chardonnay is back—and better than ever!
This cool climate chardonnay displays pronounced aromas of white blossom, yellow peach and hints of tropical fruit, combined with vanilla oak, butterscotch and almonds. A well-balanced palate showing fresh grapefruit, guava and stone fruit, rounds out with a mild vanilla spice and creamy undertones.

The 2025 vintage delivered outstanding wines, supported by ideal growing conditions and a return to average yields. A mild, well-watered winter and a warm, dry summer encouraged even ripening and excellent flavour development, while cool March weather allowed a smooth, extended harvest. The fruit shows great character, structure and purity with precise acidity and good intensity.
This pristine single vineyard Chardonnay was whole bunch pressed to retain delicacy and freshness, then settled in tank to clarify overnight. The juice was transferred to French oak barriques (20% of which were new) for ferment and maturation, with the barrels completing malolactic fermentation soften the high natural acidity from this very cool season. Prepared for bottling in January 2026.
