VINTAGE
The 2025 vintage on the Mornington Peninsula was near-ideal, marked by a mild spring, warm but balanced summer, and steady ripening under the region’s cool maritime influence. Early harvests produced average yields and exceptional fruit quality, especially for Pinot Noir and Chardonnay. Pinot Noirs show vibrant red fruit, fine tannins, and lively acidity, while Chardonnays balance ripe stone-fruit flavours with tension and structure. Whites are slightly lower in yield but highly expressive, and reds display freshness despite warmth. Overall, 2025 is considered a standout vintage, combining ripeness, balance, and longevity—ideal for both early enjoyment and medium-term cellaring.
WINEMAKING
Whole bunch pressed and allowed to settle overnight, then fermented cool in stainless steel tank to preserve the fine fruit aromas. Fermented to complete dryness, then prepared for bottling in late July, so the fresh fruit drive of the wine was preserved with the precise, minerally acidity.
